Greek Pizza


HAPPY FRIDAY!

Mmmm, pizza on a Friday night.  Friday night and pizza just go well together.  Growing up, Friday night usually involved pizza.  When my sisters and I were little, my dad would take us to pick up pizza from Little Caesar's, rent videos at the Wherehouse (pre Blockbuster days), and then stop at Baskin-Robbins for ice cream (anyone remember their classic daiquiri ice?).  As we got older, Friday night  involved my mom's homemade pizza and sleepovers with the ABC TGIF lineup.

Even as I've grown older, pizza is just a great way to kick off the week end.  My friends and I take turn hosting dinner parties in our homes, and pizza parties are always one of our favorites!  Everyone will bring different toppings, and we'll come up with all sorts of yummy pizza combinations.  Greek pizza sounds more exciting than vegetable pizza, doesn't it?

This pizza combines all the vegetables frequently found in yummy Greek dishes and throws it onto a pizza.  Since my friends and I are not big on olives, I left them off.   With all of the vegetables and different cheeses, this tasted way better than the standard veggie pizza.

If you like to eat pizza with ranch dressing, try this pizza with some tzatziki sauce!

Greek Pizza
Yields 1 pizza

Ingredients:
1 batch of pizza dough
Extra virgin olive oil
Chopped tomatoes
Fresh spinach leaves
Chopped red onions
Chopped peppers
Sliced black olives
Chopped fresh herbs (oregano, basil)
Crumbled feta cheese
Shredded mozzarella cheese
Shredded Pecorino Romano cheese

Directions:
Preheat the oven (preferably with a pizza stone) to 500ºF.  Before cooking the pizza, make sure the stone has been heated for at least an hour.

Sprinkle a piece of parchment paper with cornmeal or semolina flower.  Roll out the pizza dough into a large circle, and leave a thicker ring around the edge for the crust.  Brush olive oil lightly around the outer edge.  Spread a thin layer of pizza sauce over the crust, and layer toppings as desired.  Sprinkle with a layer of mozzarella cheese, followed by Pecorino Romano cheese, and then feta cheese.

Once assembled, transfer the parchment paper and pizza to the preheated baking stone.  Bake for 10-12 minutes until the cheese is melted and brown.  Allow the pizza to cool for about 5 minutes before slicing and serving.

  2. Fridays and pizza are a classic for me! A great way to kick off the weekend for sure! One of my favorite pizzas is a tomato spinach pizza from a place called Armand's. So I am sure I would LOVE your Greek version here! And your crust looks sooooo good! : )
