So, say "hello" to this sinfully rich and creamy whipped mascarpone cream.
Toss some blueberries in, and you've got yourself a Fourth of July dessert. :) I'll be making this again in a month or so when Colorado's Palisade peaches arrive.
Strawberries with Whipped Mascarpone Cream
Yields 2 servings
Ingredients:
4 tbsp. mascarpone cream
2 tbsp. whole milk or heavy cream
1 tbsp. confectioner's sugar (I used 2 packets of stevia instead)
Splash of pure vanilla extract
10-12 strawberries, sliced in halves (about 5 or 6 strawberries per serving)
Directions:
In a medium sized bowl with a hand mixer or in a stand mixer with the whisk attachment, blend the mascarpone cream, milk/cream, confectioner's sugar, and the vanilla extract on medium speed until light and fluffy.
Divide the sliced strawberries among two serving dishes and top with whipped mascarpone cream.

Love this combination Claire. I have made a strawberry pie since I was in my 20's that was just crust, berries and a sauce that held them together. Now I put a layer of whipped mascarpone between crust and berries; originally to keep the crust from getting soggy but now just because I love the flavor...so I know how good it is!
